Directions
- Preheat broiler to high. Hollow out top halves of rolls. Arrange rolls, cut sides up, on a baking sheet and brush with olive oil. Broil 1 1/2 minutes or until toasted. Set aside.
- Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and sausage to the pan. Cook 2 minutes or until lightly browned, stirring occasionally. Add onion and garlic and continue to cook for 1 minute. Deglaze the pan with balsamic.
- Add marinara, bell peppers, salt and black pepper and bring to a boil. Reduce heat, and simmer for 6 minutes or until the bell pepper is tender and the sauce has thickened slightly. Arrange about 3/4 cup sausage mixture over the bottom half of each roll, sprinkle each serving with about 2 tablespoons cheese. Place on a baking sheet, broil for 2 minutes or until cheese melts. Top with the top halves of the rolls.
