Pork Tenderloin with Mango Relish

Ingredients

1 lb. pork tenderloin
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon cumin
2 tablespoons Persian Lime olive oil

1 mango, diced small
½ small red onion, diced small
1 jalapeño pepper, seeded and minced
¼ cup cilantro, chopped
3 tablespoons Mango Habanero balsamic vinegar
Salt to taste
Directions
Preheat the oven to 350° F.
In a small bowl, combine salt, pepper, garlic powder, paprika and cumin. Rub the seasoning evenly all over the pork. Heat an oven safe skillet over medium-high heat and add 2 tablespoons of Persian Lime olive oil.
Once the skillet is hot, sear the pork 3 minutes per side, making sure all sides are browned.
Place the skillet into the preheated oven. Cook for an additional 10-15 minutes, or until the internal temperature of the pork reaches 145° F. Once cooked, transfer pork tenderloin to a plate and let rest for 10 minutes before slicing.
In a medium bowl, combine all of the ingredients for the mango relish.
Slice the pork and top with the mango relish before serving.
