Pork Tenderloin with Mango Relish

Ingredients

    • 1 lb. pork tenderloin

    • 1 teaspoon salt

    • ½ teaspoon black pepper

    • ½ teaspoon garlic powder

    • 1 teaspoon smoked paprika

    • 1 teaspoon cumin

    • 2 tablespoons Persian Lime olive oil

    • 1 mango, diced small

    • ½ small red onion, diced small

    • 1 jalapeño pepper, seeded and minced

    • ¼ cup cilantro, chopped

    • 3 tablespoons Mango Habanero balsamic vinegar

    • Salt to taste

    Directions

    1. Preheat the oven to 350° F.

    2. In a small bowl, combine salt, pepper, garlic powder, paprika and cumin. Rub the seasoning evenly all over the pork. Heat an oven safe skillet over medium-high heat and add 2 tablespoons of Persian Lime olive oil.

    3. Once the skillet is hot, sear the pork 3 minutes per side, making sure all sides are browned.

    4. Place the skillet into the preheated oven. Cook for an additional 10-15 minutes, or until the internal temperature of the pork reaches 145° F. Once cooked, transfer pork tenderloin to a plate and let rest for 10 minutes before slicing.

    5. In a medium bowl, combine all of the ingredients for the mango relish.

    6. Slice the pork and top with the mango relish before serving.
