Ingredients
- 1 cup quinoa, cooked according to package directions
- 1 can black beans, rinsed
- 1 red pepper, diced
- 1 cup cilantro, chopped
- 1/4 cup thinly sliced green onion
- 1 cup chopped tomatoes
- 2 garlic cloves, finely chopped
- 1 lime, juiced
- 1 cup cooked corn kernels
- 1 avocado, diced
- 2 tablespoons Fustini's Chipotle olive oil
- 2 tablespoons Fustini's Jalapeno Lime balsamic

Directions
- Mix all ingredients together and chill in the refrigerator, covered, until ready to serve. Serve with tortilla chips.

Great as a topping to chicken or over rice.
