Slow Cooker Caribbean Pork

Ingredients
- 2 pounds pork tenderloin, cut into 1 1/2" pieces
- 1 tablespoon Fustini's Medium SELECT olive oil
- Salt and pepper to taste
- 3 tablespoons hoisin sauce
- 2 tablespoons soy sauce
- 2 tablespoons Fustini's Jalapeno Lime balsamic
- 2 tablespoons creamy peanut butter
- 1 teaspoon cumin
- 1/2 teaspoon crushed red pepper (or to taste)
- 1 teaspoon minced garlic
- 1/2 cup chicken broth
- 1 large red bell pepper, cut into 1 1/2" pieces
- 6 green onions, cut into 1/2" pieces, plus more for garnish
- 2 tablespoons water
- 1 tablespoon corn starch
- 2 cups rice, cooked according to package directions

- Add olive oil to a large skillet over medium-high heat. Add pork, salt, pepper and cook in batches until browned, 3-4 minutes. Transfer browned pork to slow cooker. Alternatively, if your slow cooker can sauté,, sear meat on higher heat and reduce heat.
- Combine hoisin, soy sauce, balsamic, peanut butter, cumin, crushed red pepper and garlic in a small bowl. Whisk in chicken broth and pour over the pork. Stir well to combine. Scatter bell peppers and green onion over the top (do not stir in). Cover and cook on low for 4-5 hours until the pork is fork tender.
- Combine water and cornstarch in a small bowl. Pour mixture over ingredients in the slow cooker and stir to combine. Set the slow cooker on high and cook, uncovered for 10-15 minutes to thicken the sauce. Serve over rice with a garnish of green onions.
Recipe Note
