Tostadas with Chorizo and Avocado Sauce

- 12 corn tostadas
- 1 tablespoon Fustini's Cilantro and Onion olive oil
- 1 pound Chorizo sausage
- 4 oz Queso Fresco
- 2 tablespoons Fustini's Jalapeno Lime balsamic
- julienned radish for garnish
Avocado Sauce
- 3 tomatillos, quartered
- 1 jalapeno, stemmed and seeded
- ¼ cup chopped cilantro
- 1 avocado
- 2 tablespoons Fustini's Jalapeno Lime balsamic
- 1 tablespoon Fustinis Persian Lime olive oil
Directions
- Heat Cilantro and Onion olive oil in a pan and add chorizo. Sauté, until cooked through. In a small bowl, combine Queso Fresco and Jalapeno Lime balsamic.
- To plate, spoon chorizo on top of tostadas, drizzle with the avocado sauce, and top with queso fresco mixture and radishes as a garnish.
- Place the tomatillos, jalapeno, cilantro, lime oil and avocado in a blender. Puree until smooth
