Directions
- Heat 2 tablespoons of olive oil over medium heat. Add peppers, onion, salt, and pepper. Sauté, for 10 minutes until lightly browned. Add to a large bowl.
- Meanwhile, bring a large pot of salted water to a boil. Add the tortellini and cook according to the package directions. Drain and add to the vegetables.
- In a small bowl, combine the remaining olive oil with the balsamic and whisk to combine. Season with salt and pepper. Add spinach to the bowl and toss all with the dressing. Sprinkle with herbs before serving.
