Ingredients
- 2 cups flour
- ½ cup sugar
- ¼ teaspoon salt
- 1 cup salted butter, chilled
- 1½ cup sugar
- ¼ cup flour
- 4 large eggs
- 1 cup Watermelon Mint balsamic vinegar
- 4 mint leaves finally chopped
- 4 mint leaves
- 3 tablespoon of sugar
Directions
- Preheat oven to 350°. In a large bowl mix dry crust ingredients together. Add chilled chunked butter and cut together all ingredients until texture resembled fine crumbs.
- Generously grease a 9x13 pan and add crust by pressing it into the bottom of the pan to ensure an even layer. Bake crust for 20 minutes or until golden on the edges.
- While crust is baking, make custard. In a large bowl whisk together all custard ingredients. When crust is golden brown on the edges remove from oven and immediately add custard overtop. Avoid overmixing the custard before pouring, as that creates bubbles. Bake for an additional 20 minutes or until the top is set. Let cool on counter for 30 minutes and then move to fridge for 2 hours. In a food processor or blender add sugar and mint and pulse until completely incorporated and sprinkle over bars. Cut and serve chilled! Enjoy!
