Ingredients
- 8 oz medium shrimp, peeled, deveined
- 1 tablespoon Fustini's Chipotle olive oil, plus more to taste
- 2 garlic cloves, minced
- Kosher salt and freshly ground black pepper
- 1/3 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup shredded mozzarella
- 2 tablespoons freshly grated Parmesan
- 1/2 teaspoon onion powder
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried oregano
- 1 baguette, cut into 1/3-inch wide slices
- 1 tablespoon cajun season, more to taste
- 2 tablespoons chopped fresh parsley

- Preheat the oven to 400 degrees F. In a small bowl toss shrimp with olive oil and garlic. Season with salt and pepper to taste. Place shrimp on a single layer on a baking sheet. Place in the oven and roast just until pink, firm and cooked through about 6-8 minutes. Let cool to handle and dice into bite-size pieces.
- In a large bowl, combine shrimp, mayonnaise, sour cream, mozzarella, Parmesan, onion powder, thyme, and oregano and season with salt and pepper. If you wish for a more spicy kick, add cayenne pepper to the mixture. Lightly stir to combine.
- Place baguette slices in a single layer onto a baking sheet. Top with shrimp mixture, sprinkle with cajun seasoning. Place in the hot oven and bake for 6-8 minutes until cheese is melted.
Recipe Note
Add cayenne pepper or substitute Fustini's Cayenne Crush olive oil for a more spicy kick. Adapted from damndelicious.com
