Chipotle Chicken Pasta

Ingredients
- 2 lbs boneless, skinless chicken (breasts, thigh)
- 3 tablespoons of Fustini's Chipotle olive oil, divided
- Kosher salt and freshly ground pepper
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 cup adobo sauce
- 1 small red onion, thinly sliced
- 2 garlic cloves, crushed
- 1 1/2 cups diced bell peppers (red, orange, green, yellow)
- 1 jalapeno, diced
- 1 pound dried rigatoni pasta
- 1/4 cup + 2 tablespoons Fustini's Jalapeno Lime balsamic, divided
- 2 cups chicken stock
- 16 oz jar black bean and chipotle salsa
- 1/2 cup water if needed
- 1 cup cherry tomatoes, quartered
- 1 tablespoon lime juice
- sour cream, to serve
- lime wedges, to serve

- In a large sauté, pan, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken to the pan and season the chicken breast pieces with kosher salt, 1/4 teaspoon chili powder and 1/4 teaspoon cumin. Cook chicken for 4 minutes until seared. Mix in the adobo sauce and continue cooking until the chicken is cooked through. Remove from the pan and set aside on a plate.
- Add the remaining 1 tablespoon of olive oil and add the onion. Sauté, until translucent and soft. Add the garlic, bell peppers and jalapeno. Sprinkle with the remaining 1/4 teaspoon of chili powder and 1/4 teaspoon of cumin. Cook veggies over medium-high heat until soft. Remove from the pan and set aside with the chicken.
- Add the 1/4 cup of balsamic, chicken broth and salsa to the pan. Add the pasta, stir to combine, you may need to add water so that the pasta is just covered with liquid. Cover the pot and cook covered for 15-20 minutes until pasta is done, stirring every so often, replacing the lid quickly so the heat doesn't escape. When pasta is done, stir in the tomatoes, and lime juice Add the chicken and veggies back to the pan heating until warmed through.
- In a small bowl, combine sour cream with the remaining balsamic. Whisk until combined. Garnish dish with crema and lime wedges.
Recipe Note
You can decide if you want to include the chipotle peppers with the sauce, or just use the sauce. For more heat, use Fustini's Cayenne Crush or Aji Verde olive oils.
