Citrus & Avocado Salad with Meyer Lemon Olive Oil

1 large citrus fruit, peeled and sliced (grapefruit, orange, blood orange, or tangerine)
1 ripe avocado, sliced
2 cups arugula
1/2 cup sprouts or microgreens
1/4 cup shaved fresh fennel bulb
1 tbsp fresh lemon juice
3 tbsp Fustini’s Meyer Lemon Olive Oil
Flaky sea salt and black pepper, to taste
In a small bowl, whisk together lemon juice and Meyer Lemon Olive Oil. Season with salt and pepper.
Arrange arugula on a serving plate. Top with citrus, avocado, sprouts, and fennel.
Drizzle with dressing and serve immediately.
