Hot Honey Sweet Potato and Kale Roast

Ingredients

  • 2 Sweet Potatoes, cut into spears (about 1/2in thick)

  • 1 Red Onion, cut into petals

  • 3 cups Dinosaur Kale - messaged and stems removed

  • 1/3 cup walnuts

  • 2 - 3 tablespoons of Fustini’s Blood Orange Olive Oil

  • 3 - 4 tablespoons of Fustini’s Hot Honey Balsamic Vinegar

  • 3 oz Soft Goat Cheese

  • Salt to taste

Directions

  1. Preheat the oven to 425°F and prep a large baking tray with parchment paper and lightly brush with olive oil.

  2. In a large bowl toss together sweet potatoes, red onion, salt, and Fustini’s Blood Orange Olive Oil. Spread out evenly on the prepared baking sheet and put in the preheated oven.

  3. Roast for 20 minutes, flipping everything halfway through. Keep cooking until a knife can pierce through the potatoes and they are lightly caramelized and golden brown.

  4. Add kale and walnuts over top the pan and cook for another 5 - 8 minutes or until the kale is wilted and begins to crisp on the edges and the walnuts begin to lightly toast.

  5. Remove pan from the oven. Generously drizzle Fustini’s Hot Honey Balsamic Vinegar over everything and toss gently to coat.

  6. Plate the dish and garnish with sprinkled crumbles of goat cheese. Serve Warm & Enjoy!!
