This quick lunch or light dinner hits all the spots - creamy, dreamy ginger lime sesame sauce is drizzled over tender rice noodles and accompanied by pan-seared asparagus and tangy, spicy kimchi (we bought ours, but feel free to make your own!)

Ginger and lime brighten the rich flavors of peanut and sesame in this complex-tasting (but easy to make!) sauce. You can substitute any pickled veggies for the kimchi, but this recipe is best with fresh asparagus.

Ingredients

1 ½ lbs fresh asparagus

1 tablespoon Ginger Crush olive oil

1 cup kimchi, any style

1 (8.8oz) box thin rice noodles

sliced scallion greens, to garnish
Creamy ginger lime sesame sauce
-
2 tablespoons Ginger Crush olive oil
-
½ cup peanut butter
-
2 tablespoons soy sauce
-
2 tablespoons Iron Fish Honey wine vinegar
-
2 teaspoons Sesame seed oil
-
3 cloves fresh garlic, minced or grated
-
juice of 1 whole lime
Directions
Bring a large pot of water to boil. While you wait, prepare the sauce.
Creamy ginger lime sesame sauce
Combine all sauce ingredients and whisk until smooth. Adjust viscosity using hot water- you want it thin enough to slowly drip from a spoon.
Set sauce aside and let flavors mingle while you prepare the rest of your ingredients.
Heat olive oil in a large pan until it shimmers. Add asparagus and sautee until lightly browned on all sides.
Cook rice noodles according to box instructions. Once rinsed and drained, toss with prepared sauce.
Divide sauced noodles among three bowls (you may have extra) and add kimchi, asparagus, and green onion garnish. Enjoy!
