Grilled Pesto Sausage Sandwich

Ingredients
- 4-6 Italian sausage links
- 4 ciabatta rolls or Italian bread rolls
- 1/2 cup Ligure Pesto
- 1 jar roasted red bell peppers, sliced
- 1 cup salad greens
- 8 slices mozzarella cheese
- Fustini's Tuscan Herb olive oil for brushing

- Preheat grill to medium heat. Cook sausages, turning occasionally until internal temperature reaches 165. Let rest 5 minutes and then slice lengthwise.
- Cut each roll in half and brush with olive oil. Place cut side down on the grill for 1-2 minutes until lightly charred. Remove from heat and spread 1 tablespoon of pest on each cut half of the bread. Place the sliced sausage on the pesto of the bottom half of each roll. Layer peppers evenly over each sausage. Top with mixed greens and mozzarella slices. Place the top half of the rolls on the sandwich.
