Pork Chops with Snap Peas

Ingredients
- 2 tablespoons Fustini's Medium SELECT olive oil
- 3 pork chops
- salt and pepper
- 2 tablespoons Fustini's Meyer Lemon olive oil
- 1/2 cup green onion, chopped
- 2 cups snap peas
- 1 tablespoon mint, chopped
- 1 teaspoon red pepper flakes
- 2 cups feta cheese

- Heat Fustini's single varietal olive oil in a large skillet. Season pork chops with salt and pepper and add to hot oil. Cook 3-4 minutes each side to sear. Lower heat and cook an additional 4-5 minutes. Remove from pan.
- In the same pan, increase heat and add Meyer Lemon olive oil and green onion. Sauté, 3 minutes, picking up all the remaining bits of flavor that are on the bottom. Add peas, mint and red pepper flakes. Sauté, 3-4 minutes until all heated and combined. Add pork chops back to the pan and sprinkle with 1/2 of the feta. Reduce heat, cover with a lid and continue cooking until pork is done. To serve, garnish with remaining feta.
