- 6 medium Russet potatoes, peeled
- 1 onion
- 3 eggs
- ¼ cup flour
- ¼ cup Matzo Meal
- 1 teaspoon salt
- Fustini's Gremolata olive oil
- sour cream for garnish
- chopped chives for garnish

- Grate potatoes and onions using the large holes on a box grater or a food processor, place grated potatoes in a tea towel, and wring out all moisture. Add potatoes to a bowl with flour, matzo meal salt, and eggs.
- Line the bottom of an air fryer with parchment paper. Drizzle with olive oil. Scoop about a 2-ounce ball of potato mixture and flatten with your hands. Place on the parchment in the air fryer and drizzle with more olive oil.
- Air fry at 400 degrees F. until the latkes are light golden brown &, just crisp on the edges, about 8-10 minutes. Flip latkes over and drizzle with a little more olive oil. Continue to cook for 6-8 more minutes until crispy. Sprinkle with chives and serve with sour cream.
