In a medium bowl, mix gouda, cream cheese, mayo, olive oil, sour cream, and bacon until well blended, reserve 2 tablespoons of bacon and of green onions for garnish. Stir in bacon and green onions, put the mixture into an oven-safe bowl and bake for 20-25 minutes until heated through and top with the remaining bacon and green onions and serve with warm bread, tortilla chips, or crackers.
