Turkey and Stuffing Stuffed Peppers

Ingredients
- 4 bell peppers, tops sliced off and hollowed out
- 2 tablespoons Fustini's Tuscan Herb olive oil
- 1/2 onion, diced
- 2 cups leftover turkey, shredded
- 2 cups leftover stuffing
- salt and pepper to taste
- 1 1/2 cups shredded mozzarella cheese
- fresh parsley, garnish

- Preheat oven to 400 degrees F. Place hollowed-out peppers on a baking sheet.
- In a sauté, pan, heat olive oil over medium heat. Add the onion and cook until softened. Add turkey, stuffing, breaking up clumps. Cook until heated through.
- Remove turkey mixture from heat and stuff the inside of the peppers, pressing down slightly. Top with cheese and bake until peppers have some char on them and the cheese is melted. Remove from heat and allow to cool slightly. Garnish with parsley before serving.
