Warm Agrodolce Chicken Salad

Ingredients
- 2 tablespoon Fustini's Medium SELECT olive oil
- 1 chicken breast, boneless, skinless, sliced into strips
- 1/2 cup mushrooms, sliced
- 1/2 teaspoon garlic, minced
- 2 tablespoons Fustini's Herbs de Provence olive oil
- 1/4 cup Fustini's Black Truffle balsamic
- 1 cup cherry or grape tomatoes, halved
- 1 tablespoon mixed herbs, chopped (Rosemary, Sage, Oregano)

- In a large skillet, sauté, chicken Fustini's Single Varietal olive oil. Remove from pan and set aside. In the same skillet add Fustini's Herbs de Provence and sauté, mushrooms for 3-4 minutes, then add garlic and cook for 30 seconds. Add chicken back in and combine with agrodolce, tomatoes, and mixed herbs. Cook and stir until just heated through. Serve over greens.
