Autumn Market Salad with Maple Tahini Dressing

Pears, sweet bell peppers, robust red onion, and toasted pepitas are decadently dressed with a Maple Tahini dressing you'll want to use over and over again. This salad takes just a few minutes to throw together, making it perfect for a working lunch or a dinner side salad.

Autumn Market Salad with Maple Tahini Dressing

Ingredients

  • 4 cups spring mix

  • ¼ of a small red onion

  • 1 ripe pear

  • ½ cup toasted pepitas (or other toasted seeds)

  • ½ of a sweet bell pepper

  • thinly sliced Serrano ham (optional)

  • crumbled feta or goat cheese (optional)

  • ¼ cup tahini (sesame seed paste)

  • 1 tablespoon Iron Fish Bourbon Maple Syrup

  • 2 teaspoons Fustini’s Medium SELECT olive oil

  • 1-2 tablespoons Fustini’s Vinoso red wine vinegar (to taste)

  • pinch of freshly ground sea salt and black pepper

  • 2-4 tablespoons water, to thin

Directions

  1. Prepare the fruit and veg: Core and slice the pear very thinly, julienne the bell pepper, and slice the red onion paper thin, separating each slice.

  2. Add 1 cup spring mix to each salad plate. Top with ¼ of the pear, bell pepper, red onion, and toasted pepitas. Top with Maple Tahini Dressing and optional Serrano ham (torn into small pieces) and crumbled cheese. Serve immediately.

  1. Combine tahini, Vinoso red wine vinegar, Iron Fish maple syrup, SELECT olive oil, salt, and pepper in a Measured Dressing Jar, mason jar, or other fully sealable container. Shake very well.

  2. Taste your dressing, then thin with a small amount of water. Seal and shake again, taste, and adjust your seasoning as desired. If you want a thinner dressing, continue to thin with small amounts of water until you reach the desired consistency.

    You can keep this dressing in the refrigerator for up to a week – bring to room temperature on the counter and shake well before using again.
