Ingredients
- 3 large tomatoes
- 1 tablespoon Fustini's Basil Crush olive oil
- Kosher salt & freshly ground pepper
- 3/4 cup shredded cheddar cheese
- 6 strips of cooked bacon, chopped
- grated parmesan for garnish
- chopped chives for garnish

- Preheat the oven to 400 degrees. Slice the tops off of the tomatoes and hollow them out with a spoon. Place on a baking sheet and drizzle with olive oil and season with salt and pepper.
- Place in the oven and bake for 10 minutes, until softened slightly. Remove from the oven and place a little bacon and cheddar cheese at the bottom of each tomato. Crack 1 egg into the center of each tomato. Top with more cheddar and bacon and bake for 15 minutes or until doneness to your preference. Season with more salt, pepper and garnish with chives and parmesan.
