Bruschetta Grilled Chicken

Ingredients

- juice of 1 lemon, divided
- Kosher salt & freshly ground black pepper

2 teaspoons Fustini's Tuscan Spice blend
- 4 boneless, skinless chicken breasts
- 1 1/2 cups diced tomatoes
- 2 garlic cloves, minced
- 1 tablespoon fresh basil, chopped
- 4 slices of fresh mozzarella
Directions
- In a small bowl, combine olive oil, half the lemon juice, salt, pepper and Tuscan seasoning. Whisk together to combine. Add chicken to a large ziplock or dish. Pour marinade over top and refrigerate for up to 2 hours.
- Heat the grill over medium-high heat and add chicken, discard remaining marinade. Grill until charred and cooked to an internal temperature of 160 degrees, about 5-7 minutes per side.
- Meanwhile, combine tomatoes, garlic, basil and remaining lemon juice into a medium bowl. Season with salt and pepper. When the chicken is about done, top each breast with a slice of mozzarella. Close the grill lid until the cheese has melted. Remove from heat and top each chicken piece with tomato mixture before serving.
Recipe Note
