Core out the strawberries ¾, of the way down and set aside.
In a bowl, mix together the cream cheese, olive oil, powdered sugar, and Fustini's balsamic. Scoop the mixture into a piping bag with a decorative tip and pipe it into the hollowed-out strawberries. Finish by sprinkling the graham cracker crumbles over the filled tops of the strawberries.
