Tips and Variations:
- Add greens: For a heartier salad, serve the fennel and citrus over a bed of arugula, frisée, or mixed greens.
- Include avocado: Add cubed or sliced avocado for a rich, creamy contrast to the crisp fennel and tangy citrus.
- Add nuts: Toasted almonds, pistachios, walnuts, or pine nuts can add an extra layer of crunch and flavor.
- Add cheese: Crumbled feta or shaved parmesan add a savory, salty note.
Ingredients
- 1 large fennel bulb, trimmed, stalks removed, and very thinly shaved with a mandoline or very sharp knife
- 2 medium oranges (such as navel or Cara Cara), peeled, with white pith removed, and sliced into thin rounds or segmented
- 1/4 cup finely chopped red onion (optional)
- 1/4 cup toasted sesame seeds, for garnish
- A handful of reserved fennel fronds, for garnish
-
1 oz Sesame oil
-
2 oz Blood Orange olive oil
-
1 oz Garlic olive oil
-
5 oz Ginger & Honey balsamic
- 1 Tablespoon soy sauce or tamari
Directions
Prepare the dressing: Combine soy sauce, all three oils, and the balsamic vinegar in a jar and shake thoroughly.
Assemble the salad: In a large bowl, combine the shaved fennel and red onion (if using). Add the orange rounds or segments. Gently toss to combine.
Dress the salad: Drizzle the sesame orange dressing over the salad ingredients. Gently toss again to coat everything evenly.
Serve: Transfer the salad to a serving platter. Garnish with toasted sesame seeds and the reserved fennel fronds. Serve immediately for maximum crunch and freshness.
