Elderflower Balsamic Strawberries with Mascarpone Cheese

Elderflower Balsamic Strawberries with Mascarpone Cheese

Ingredients

    • 3 pints of strawberries, hulled and halved
    • 1/3 cup Fustini's Elderflower balsamic
    • ½ teaspoon fresh lemon juice
    • 4 tablespoons powdered sugar
    • ½ cup chilled mascarpone cheese
    • ½ cup chilled heavy whipping cream
    • ½ teaspoon vanilla extract

    Directions

    1. In a medium bowl, combine strawberries, balsamic, lemon juice, and 2 tablespoons powdered sugar (you may omit the sugar if your local strawberries are sweet). Set aside and let macerate for at least 30 minutes. Combine mascarpone, cream, vanilla and 2 tablespoons powdered sugar in a medium bowl. Whisk until thick, soft peaks form. Divide berries 6 ways. Top with mascarpone mixture. You can add some lemon zest on top if you wish.
