The recipe makes a light meal for two, but you can add cooked protein or a thick slice of toast drizzled with your favorite Fustini’s olive oil to make it a full dinner.

White beans, fresh herbs, and blanched asparagus over mixed baby greens.

Ingredients

8-10 asparagus spears, bottom ⅓ peeled

1- 15oz can white beans, drained and rinsed thoroughly

½ cup chopped fresh soft herbs such as cilantro, parsley, or basil

3 cups mixed baby greens or butter lettuce

1 tablespoon Fustini’s Garlic Rub spice blend

Salt and pepper, to taste

¼ cup Fustini’s Vinoso red wine vinegar
-
⅓ cup Fustini’s Gremolata or Herbs de Provence olive oil
Directions
Start a medium pot of water boiling for the asparagus.
Combine oil, vinegar, garlic rub, salt, and pepper and whisk well to combine.
Pour vinaigrette mixture over drained and rinsed beans in a bowl. Mix well and allow to sit while you assemble the rest of your salad.
Blanch asparagus until just tender, 1-2 minutes depending on stalk size.
Drain asparagus and assemble salads by dividing greens and beans, and topping with blanched asparagus spears.
Recipe Note
No fresh asparagus? No problem. Substitute pickled asparagus for a zippy twist!
