Garlic Confit Toasts with Rosemary Lemon Goat Cheese

Ingredients
Garlic Confit
- 3 bulbs garlic (approximately 30 cloves)
- 1 cup SELECT Medium olive oil
- 1/2 teaspoon salt
- 1 teaspoon fresh thyme
Herbed Goat Cheese
- 17 oz goat cheese, room temperature
- 1 1/2 tablespoons fresh thyme
- 2 teaspoons Rosemary olive oil
- zest of 1 lemon
- 1/4 teaspoon pepper
Directions
- Preheat oven to 250 degrees F. Combine garlic, salt, and thyme in desired small baking container. Top it off with olive oil. If the 1 cup does not cover all the garlic add more.
- Cook at 250°, for 1 hour. While garlic cooks, combine goat cheese, thyme, Rosemary oil, lemon zest, and pepper. Make sure the goat cheese is at or near room temperature before mixing.
- Smear goat cheese mixture onto toasted sourdough, baguette slices, or flatbread crackers. Top with a clove of garlic. Enjoy!
