Goat Cheese Porcini Mushroom Burger

3 Tbsp Fustini’s Porcini Olive Oil
8 oz porcini mushrooms, finely chopped (may substitute mushroom of choice)
1 small onion, peeled and finely chopped
1 Tbsp Fustini’s 12 Year White balsamic vinegar
1 lb of ground beef
1 egg, beaten
½ cup panko or bread crumbs
2 Tbsp Worcestershire sauce
Salt and pepper to taste
8 ounces of goat cheese
2 Tbsp Fustini’s Tuscan Spice Blend
Fresh baby Arugula (or greens of your choice)
4 Brioche hamburger buns
Heat Porcini Olive Oil in a large skillet over medium-high heat. Add mushrooms and onions and saute until the mixture has lost most of the moisture (about 10 minutes). Deglaze pan with Fustini’s 12 year white balsamic vinegar (making sure to scrape all the yummy brown bits off the pan). Transfer to a small bowl to cool.
In a large bowl, combine ground beef, egg, panko, Worcestershire sauce, salt and pepper. Stir cooled mushroom mixture into meat mixture. Form 4 patties. Cook patties (on either a preheated grill or a skillet) until just pink in the middle- about 4 minutes per side.
While burgers are cooking, combine goat cheese and tuscan spice blend.
