Grilled Cajun Shrimp Kebabs

Ingredients
- 16 large raw shrimp, peeled, deveined
- 6 ounces smoked sausage, cut into 1/2" rounds
- 1 small onion, cut into 1" pieces
- 1 small red pepper, cut into 1" pieces
- 16 cherry tomatoes
- 3 tablespoons Fustini's Chipotle olive oil
- 2 teaspoons Cajun seasoning
- 1 teaspoon fresh thyme, chopped
- 1/2 teaspoon fresh oregano, chopped
- 2 tablespoons fresh parsley, chopped

- Preheat the grill to high (450°,F to 500°,F), or heat a grill pan over high. Combine shrimp, sausage, onion, bell pepper, tomatoes, olive oil, Cajun seasoning, thyme, and oregano in a large bowl, and toss to coat. Thread mixture onto 8 (10-inch) skewers, alternating ingredients.
- Place skewers on oiled grates, and grill, uncovered until vegetables and sausage are lightly charred and shrimp is cooked through, about 2 minutes per side. Transfer skewers to a serving plate, and sprinkle with parsley.
