In a small bowl, whisk together spice blend, lemon zest, and vinegar. Stir in olive oil to create a paste. Spread the paste all over the meat.
Heat grill or grill pan to medium-high heat. Grill pork, turning occasionally with tongs until charred and internal temperature reaches 145 degrees, about 20 minutes. Let rest 10 minutes, then slice and serve with Herb Sauce.
