Bring a large pot of water to a boil. Heavily salt the water then stir to make sure the salt is dissolved. Add macaroni and simmer until just cooked through. Drain immediately and drizzle Fustini's Delicate olive oil over all, stirring to coat. Refrigerate until well chilled, stirring occasionally to coat again in olive oil.
Place cooked pasta in a large bowl and add onion, red pepper, celery, parsley, scallions and ham. Stir to combine. In a separate bowl, whisk together garlic, mustard and Fustini's Sicilian Lemon balsamic. While whisking, slowly add Fustini's Tuscan Herb olive oil to emulsify. Season with salt and pepper and pour over pasta. Stir to coat and serve.
