You'll want to make this healthy and delicious lettuce wrap every week, with its herbaceous, perfectly balanced dressing and the sweet pop of pickled onions.
Ingredients

3 large leaves iceberg lettuce, washed & dried
- 2 oz. Pepperoni
- 2 oz. Salami
- 2 oz. Cherry tomatoes, washed & halved

1 oz. Mini mozzarella balls
- 1 oz. Mild banana peppers
- 1 oz. Fustini's Iron Fish Honey pickled onions
- Italian seasoning, crushed red pepper, salt, and pepper to taste.
Dressing

1 Tbsp. Iron Fish Honey Vinegar

1 Tbsp. Tuscan Herb Olive oil
- Salt & pepper to taste
Fustini's Iron Fish Honey Pickled Onions
- 1 small red onion (about 5 oz.), julienned
- ½ cup Iron Fish Honey Vinegar
- ½ cup water
- 1 Tbsp. salt
Directions
Fustini's Iron Fish Honey Pickled Onions
In a small saucepan, bring Fustini's Iron Fish Honey vinegar, water, and salt to a rolling simmer. In a heat-safe jar, pour the hot vinegar over the onions. Lid the jar and place in the fridge to cool.
Lettuce Wrap
- To assemble the lettuce wrap, stagger the three large iceberg lettuce leaves over one another. Layer the pepperoni, salami, cherry tomatoes, mozzarella balls, banana peppers, and Fustini's Iron Fish Honey pickled onions. Add Italian seasoning, crushed red pepper, salt, and pepper to taste.
- In a small jar, add Iron Fish Honey vinegar and Tuscan Herb olive oil together. Add salt and pepper to taste. Mix the vinegar and olive oil well. Pour the dressing over the open lettuce wrap, then roll the lettuce wrap tightly, Tucking in the ends. Cut in half and enjoy!
