Rainbow Swiss Chard with Tomatoes & Red Onion

Ingredients
- 3 tablespoons Fustini's Medium SELECT olive oil
- 1 red onion, halved and sliced on the boas
- 2 pounds rainbow Swiss Chard
- 2 large or 6 small tomatoes, quartered
- 1-2 tablespoons Fustini's 18 Year balsamic
- salt and pepper to taste

- Trim stems and removed thick ribs from Swiss chard, cut stems into bite-sized pieces and chop leaves coarsely. Wash and dry thoroughly. Set aside. In a large pot with high sides, heat Fustini's Single Varietal olive oil until hot but not smoking. Add onions and Swiss chard stems. Sauté, 5 minutes. Add greens a few handfuls at a time, stirring and making further additions as they wilt. Add tomatoes and stir. Cook about 10 minutes, until greens are soft and tomatoes have rendered some of their juice. Stir in Fustini's 18 Year balsamic. Season to taste with salt and pepper.
