Enjoy fresh fall flavors in this easy and delicious salad.
Preheat oven to 425. Chop apple, sprinkle with cinnamon and a pinch of salt. Roast for 15 minutes, or until caramelized.
For the dressing, whisk ingredients together and combine with chicken.
Add chicken and dressing to the spinach, pecans and apples. Chill slightly before serving.
