Salmon Salad with Bacon Dressing

Ingredients
- 8 ounces salmon
- salt and pepper to taste
- 12 ounces spring mix
- fresh chives, chopped
- yellow tomatoes, halved
- dried cranberries
- fresh ground black pepper
- pecans, chopped, garnish (optional)
- 4 slices crispy cooked thick-cut bacon, crumbled
- 1 garlic clove, minced
- 4 tablespoons Fustini's Jalapeno Lime balsamic vinegar
Bacon Dressing
Directions
In a small sauté pan, heat olive oil. Season salmon with salt and pepper and sauté on both sides of the salmon until the desired doneness. Mix with remaining ingredients in a large bowl and pour dressing over. Divide between serving plates and serve immediately.
- Mix all together and use immediately.
