Spicy Kielbasa with Stout Onions

  1. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the beer and onions and cook, stirring often. Reduce the heat to low once the onions start to brown. Continue cooking until onions caramelize and all the liquid has reduced 5-7 minutes. Season with salt and pepper and set aside.
  2. In a large sauté pan, heat the remaining olive oil over medium heat. Split the sausage down the middle so they open and lay flat. Sear the links on the cut side until brown, about 5 minutes, and remove from the pan. In the same pan, add the bread cut side down and toast until brown.

  3. Spread mustard on the buns and add the kielbasa. Top with peppers and caramelized onions. Garnish with watercress before serving.
