4 small zucchini, ends trimmed

1-2 cloves of garlic

1 tablespoon Fustini's Aji Verde Crush olive oil

2 teaspoons lemon juice

grated Parmesan cheese

2 tomatoes, chopped

eggplant or any other vegetables you want to sauté to mix in
Directions
- Use a vegetable spiralizer or mandolin to make zucchini noodles. Lightly sauté, the zucchini and minced garlic in olive oil. In a different pan, sauté, vegetables of your choice including tomatoes (if you want a sauce).
- Combine zucchini noodles and veggies or use as a sauce. Squeeze fresh lemon and grate Parmesan cheese in top. Salt and pepper to taste
Recipe Note
For a crunch zoodle, do not sauté, just combine and add olive oil.
