In a small bowl, whisk together balsamic, garlic, honey, olive oil, and spices. Pour over the steak and let marinate for 20 minutes. Season tomatoes with salt and pepper.
Heat the grill to high. Drain steak from marinade and grill steak for 4-5 minutes per side, or until desired doneness. When almost done, top each filet with a slice of tomato and a slice of cheese. Cover grill and heat until cheese becomes melty. Top with basil before serving.
