Summer Squash Goulash

Ingredients
- 2 tablespoons Fustini's Basil Crush olive oil
- 1 large onion, diced
- 2 garlic cloves, minced
- 2 cups thinly sliced Crimini mushrooms
- 1 red pepper, diced
- 2 tablespoons sweet paprika
- 2 tablespoons tomato paste
- 2 tablespoons red miso paste
- 2 tomatoes, seeded and diced
- 2 cups halved and thinly sliced summer squash
- 1/4 cup chopped basil
- Fustini's Sherry vinegar

Directions
- In a sauté, pan over medium heat, cook the onion in olive oil until softened. Add garlic and cook 30 seconds until fragrant. Add mushrooms and cook until lightly browned on all edges.
- Add red pepper, paprika, tomato paste and miso paste. Cook 1-2 minutes until the paprika is fragrant. Stir in tomatoes and cook until they begin to soften and release their liquid. Add squash and basil. Cover and cook until squash is softened but still firm.
- Uncover and let thicken to desired consistency. Season to taste with salt, pepper and vinegar.
