1 large sweet potato, cut into 1/2" cubes

1 small yellow onion, finely chopped

1 small red bell pepper, seeded and finely chopped

3 tablespoons Fustini's Chipotle olive oil

1 1/2 teaspoons smoked paprika

Kosher salt & freshly ground black pepper

2 scallions, thinly sliced

Chopped fresh cilantro, for serving
Directions
- In a medium bowl, toss sweet potato, onion, bell pepper, olive oil, paprika, salt and pepper to combine.
- Working in batches, in an air-fryer basket, arrange the potato mixture in a single layer (do not overcrowd). Cook at 400°,, tossing halfway through until potatoes are browned in spots and cooked through, about 14 minutes.
- Transfer the potato mixture to a platter. Top with scallions and cilantro.
