Heat butter and olive oil in a large skillet over moderate heat. Add onion, celery and mushroom. Cook, stirring often until onion is soft and all liquid is gone from the mushroom. Add garlic and cook for 30 seconds. Add flour and stir to combine. Cook for several minutes stirring constantly. Add Stock and turkey meat and bring to simmer over low heat. Cook, stirring often until thickened. Add cheese and stir to melt. Season with salt and pepper and serve with pasta.
