Whipped Feta & Cream Cheese with Green Olive Salsa Verde

This exciting (but easy!) appetizer is a delicious crowd-pleaser that highlights the freshness of our green Robust SELECT olive oil. 

Whipped Feta & Cream Cheese with Green Olive Salsa Verde

Ingredients

    • 1 cup plain feta

    • 1 cup full-fat cream cheese

    • 1 garlic clove, finely chopped/ grated

    • 1-2 Tbsp Robust SELECT olive oil

    • a squeeze of lemon juice
    • sea salt and freshly ground pepper

    • 7 ounces pitted green olives, chopped

    • a handful of flat-leaf parsley, finely chopped
    • a handful of chives, finely chopped
    • a handful of fresh oregano, picked and finely chopped
    • a small handful of capers, chopped
    • a small handful of fresh thyme leaves, picked and chopped
    • 2 anchovy fillets, very finely chopped
    • ½ cup Medium SELECT olive oil

    • 2 Tbsp Vinoso red wine vinegar

    • zest of 1 lemon
    • sea salt and freshly ground pepper
    • 1 rustic baguette, thinly sliced for serving

      1. Add the feta, cream cheese, and garlic to a stand mixer and mix until combined. Scrape down the sides and add the lemon juice and olive oil. Add one tablespoon of olive oil first and check the consistency, if you would like it a little looser, add the second tablespoon.
      2. Mix and then taste and adjust the seasoning. Give a final mix until combined and fluffy.

      1. In a small mixing bowl, add the olives, parsley, chives, oregano, capers, thyme and anchovies and mix well to combine.
      2. Pour in the olive oil and vinegar and mix well to combine.
      3. Add the zest, season with salt and pepper and give it one last stir.

      1. Set the oven to grill; brush the bread slices with olive oil and season with salt and pepper. Grill the bread until golden brown and crispy.
      2. Scoop the whipped cheese into a serving dish or onto a platter. Drizzle with olive oil and serve the green olive salsa and plenty of toasted bread on the side.
