Buttercrumb and Dill Baked Cod

  • 4 - 6 oz. pieces of cod fillet, skinless and boneless
  • 1 tablespoon Fustini's Delicate SELECT olive oil
  • salt and pepper
  • Dill Mayonnaise
  • 1 cup bread crumbs, toasted
  • 2 tablespoons butter, melted
  • chopped parsley
Dill Mayonnaise


Step 1. 

Preheat oven to 375 degrees. Place a grate on a sheet pan and spray with nonstick cooking spray. Season cod fillets with salt and pepper and place on prepared grate. Spread each cod fillet with enough dill mayonnaise to coat. Combine bread crumbs, melted butter and Fustini’s olive oil and sprinkle over mayonnaise. Place into the hot oven and bake for 10 to 12 minutes - or approximately 10 minutes per inch of thickness. Serve immediately garnished with chopped parsley.

Step 2.  Dill Mayonnaise

Combine all ingredients and mix thoroughly. Refrigerate until use.
