Baked Goat Cheese and Sundried Tomatoes

Ingredients
- 4 ounces goat cheese
- 1 small shallot, minced
- 1 clove garlic, minced
- 2 tablespoons Fustini’s Robust SELECT olive oil
- 3-4 Sun-dried tomatoes, diced
- 2 cups of bread cubes
- 1/4 cup Fustini’s Garlic olive oil
- salt and pepper

Directions
- Preheat oven to 375 degrees. Place goat cheese in large ramekin or baking dish. Combine shallots, garlic, extra virgin olive oil and sun-dried tomatoes and pour over goat cheese. Bake in the oven until soft and hot - 5 to 7 minutes. Crumble some garlic croutons and sprinkle over top then serve with crostini, Bruschetta, or crackers
- Preheat oven to 350 degrees. Place bread cubes in a large bowl and drizzle olive oil over while stirring. Spread cubes in a single layer on the baking sheet then place it into the oven. Bake until brown and crispy - 10 to 12 minutes. Remove from oven and let cool to room temperature.
