Baked Pork and Cannellini Beans

Ingredients

- 3 tablespoons Fustini's Chipotle olive oil
- 2 tablespoons Fustini's Medium SELECT olive oil
- 8 oz pork loin, cut into 1" cubes
- Kosher salt and white pepper
- 4 oz smoked ham, cut into small dice
- 1 large onion, small dice
- 1 bell pepper, all pith removed and cut into a fine dice
- 2 jalapenos, seeded, pith removed and minced
- 32 oz cannellini beans, drained, rinsed
- 12 oz petite diced tomatoes
- 2 oz diced green chilies
- 1/4 cup Fustini's 18 Year balsamic
- juice of 1 lime
Directions
- Preheat the oven to 325 degrees F. Heal the oils in a large oven-proof pan with a tight-fitting lid over medium heat. Season pork cubes with salt and white pepper and brown all sides in the heated oil.
- Add ham and sauté, for 2 minutes. Add onions, peppers and jalapenos. Cook for an additional 3 minutes. Add beans, tomatoes, chilies and vinegar. Bring to a simmer over low heat.
- Cover and place into the preheated oven until the pork is very tender and the liquid is slightly reduced, 1 - 1 12 hours. Uncover and cook for an additional 30 minutes to reduce the liquid by another 10 percent. Serve immediately.
