Preheat the oven to 325 degrees F. Heal the oils in a large oven-proof pan with a tight-fitting lid over medium heat. Season pork cubes with salt and white pepper and brown all sides in the heated oil.
Add ham and sauté, for 2 minutes. Add onions, peppers and jalapenos. Cook for an additional 3 minutes. Add beans, tomatoes, chilies and vinegar. Bring to a simmer over low heat.
Cover and place into the preheated oven until the pork is very tender and the liquid is slightly reduced, 1 - 1 12 hours. Uncover and cook for an additional 30 minutes to reduce the liquid by another 10 percent. Serve immediately.
