Ingredients
- 4 tablespoons Fustini's Herbs de Provence olive oil
- 1 large carrot, cut into matchsticks
- 2 small garlic cloves, minced
- 3/4 teaspoon smoked paprika
- 3/4 teaspoon ground mustard
- 3/4 teaspoon onion powder
- pinch cayenne pepper
- Kosher salt and fresh ground black pepper to taste
- 4 cups chicken or vegetable stock
- 6 cups broccoli florets
- 6 oz cream cheese
- 4 cups freshly grated sharp cheddar cheese

- In a medium saucepan, add olive oil, carrot and garlic. Cook, stirring until fragrant about 2 minutes. Stir in paprika, ground mustard, onion powder and cayenne. Pour in chicken stock and bring to a boil. Season with salt and pepper.
- Add broccoli and simmer until tender about 3-5 minutes. Add cream cheese, cheddar cheese and cook, stirring until melted. Season with additional salt and pepper and serve warm.
Recipe Note
Add some more heat with Fustini's Chipotle olive oil. Even though there is 1 carrot in the recipe, it is for 6 servings which will reduce the carb count. Adapted from delish.com
