In a medium bowl, combine cream cheese, balsamic, mozzarella, spinach, fresh basil, and 1 tablespoon of the spice blend.
Create a pocket in each chicken breast by cutting a slit into, but not all the way through the long sides of each breast. Fill each pocket with cheese mixture. Secure opening with toothpicks.
Preheat oven to 375 degrees F. Heat olive oil in an oven-safe large skillet. Season each breast with the remaining spice blend. Place chicken in the heated pan and sear on both sides for about 3-4 minutes on each side. Place skillet in the oven to finish cooking. Chicken is done when the internal temperature reaches 165 degrees F. Note: some cheese may ooze out during baking. Allow to cool for 1-2 minutes and you can add the cheese back into the pocket.
