Cheesy Basil Spinach Stuffed Chicken

Ingredients
- Kosher salt & freshly ground black pepper
- 4 oz cream cheese, softened
- 1 tablespoon Fustini's Citrus Oregano balsamic
- 1/2 cup shredded mozzarella
- 1/2 cup fresh spinach, chopped
- 1/4 cup fresh basil chopped
- 1 1/2 tablespoons Fustini's Parmesan Spice blend, divided
- 4 chicken breasts, boneless, skinless
Directions
- In a medium bowl, combine cream cheese, balsamic, mozzarella, spinach, fresh basil, and 1 tablespoon of the spice blend.
- Create a pocket in each chicken breast by cutting a slit into, but not all the way through the long sides of each breast. Fill each pocket with cheese mixture. Secure opening with toothpicks.
- Preheat oven to 375 degrees F. Heat olive oil in an oven-safe large skillet. Season each breast with the remaining spice blend. Place chicken in the heated pan and sear on both sides for about 3-4 minutes on each side. Place skillet in the oven to finish cooking. Chicken is done when the internal temperature reaches 165 degrees F. Note: some cheese may ooze out during baking. Allow to cool for 1-2 minutes and you can add the cheese back into the pocket.
