Cranberry Pistachio White Chocolate Truffles

- 6 squares white chocolate melts (6 oz)
- ½ cup dried cranberries
- ½ cup pistachios
- 1 tablespoon Fustini’s Blood Orange olive oil
- Cooking spray

- Prepare an 8x8 pan with cooking spray and line with parchment paper for easy release. In a double boiler or microwave-safe glass bowl, melt the white chocolate squares and add the Fustini&rsquo,s Blood Orange oil, stirring well. Add the dried cranberries and pistachios and stir gently, spread into the prepared pan. Place in the refrigerator for the chocolate to harden again, about 30 minutes. Remove when set and with a sharp knife, cut or chop into bite-sized chunks. Does not need refrigeration, is great for sharing!
