- 2 1/2 tablespoons Fustini's Herb de Provence olive oil, divided
- 1 leek, cleaned, trimmed and sliced
- 1 garlic clove, minced
- 6 oz fresh spinach
- 4 slices whole-grain bread
- 2 tablespoons Ligurian Pesto
- 3 oz Fontina cheese, freshly grated
- 4 oz fresh mozzarella slices
Directions
- Heat a large skillet over medium-low heat. Add 1 tablespoon of the olive oil and then add the leeks and toss to coat. Cook until the leeks are softened, 5 minutes, then stir in the garlic and cook for 30 more seconds. Add the spinach to the skillet and stir. Cook until the spinach is wilted, another 2 to 3 minutes. Remove the greens and leeks from the skillet and place in a bowl.
- Using the same skillet, over medium-low heat. Assemble the sandwich by brushing the outside of each bread slice with the remaining olive oil. Spread 1/2 tablespoon of the pesto on the inside of each bread slice. On the bottom slice of each piece layer cheese, half of the spinach mixture, more cheese. Top with the other bread slice.
- Cook the sandwich until golden brown on each side, about 4 - 5 minutes per side. Serve warm.
Recipe Note
Taking the time to cook sandwiches over medium-low heat ensures that the cheese will melt and the bread won't burn. Adapted from "Seriously Delish".
