Grilled NY Strip Steak Pizzaiola

Ingredients
- NY strip steak
- Fustini's Robust SELECT olive oil
- salt
- Garlic Butter
- Pizzaiola
- fresh ground black pepper
- 2 tablespoon Fustini's Robust SELECT olive oil
- 1 shallot - minced
- 3 cloves garlic - minced
- 6 Roma tomatoes - peeled, seeded, diced - juice reserved
- 2 tablespoons fresh oregano - chopped
- 1 tablespoon fresh Italian parsley - chopped
- salt and pepper
- 1 stick butter - soft
- 1 teaspoon Fustini's Garlic olive oil
- 1 clove garlic - pulverized
- salt and pepper

Directions
- Prepare a hot grill. Run steaks with olive oil then season with salt. Grill steaks to the desired temperature over direct heat. Remove from grill and place a coin or two of garlic butter on each steak and let melt into while resting. Carve strip steak and spoon sauce over top to serve.
- Heat olive oil in a skillet over medium-low heat. When hot, add shallot and garlic and cook one minute. Add tomatoes and bring to simmer. Add herbs, season with salt and pepper and cook until tomatoes break down and a sauce is made. Use immediately.
- Place all in a bowl and mix together to emulsify. Wrap in log form and refrigerate. Cut into thin coins.
