Kielbasa Potato Bake

Ingredients
- 1 lb kielbasa, sliced int o1/4" slices
- 4 large potatoes, cut into 1/2" cubes
- 1/2 teaspoon salt
- 1 large onion, sliced thin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 3 tablespoons Fustini's Butter olive oil, plus more for greasing
- 1 cup sharp cheddar cheese

- Preheat oven to 400 F. Line a medium baking sheet with heavy-duty foil. Grease foil with olive oil. In a large bowl, combine kielbasa, potatoes, salt, onions, garlic powder and olive oil. Toss to coat well.
- Spread out meat and vegetables in a single layer on the prepared sheet pan. Sprinkle with paprika. Bake for 30-45 minutes, stirring every 15 minutes. When potatoes are soft, remove the pan and spread cheese across the top. Return to the oven for an additional 5 minutes to melt the cheese.
